SCI 202 Principles of Food Science
This course introduces students to the fundamental principles of food preparation and the many innovations and emerging trends in food science and technology. The course will explore the "how's and why's" of food preparation and integrate food preparation, science, technology, safety, government regulation, and consumption trends. After completion of the course students will have an appreciation for the role food plays in human life, culture, and health. Laboratory exercises will show students the effects of ingredients upon a recipe.
